NUREMBERG MARKETS HAVE A NEW SUSTAINABLE FOOD CONCEPT

A good year ago, the idea of a sustainable food concept for the Nuremberg markets was born. Majd Hamwi, founder and culinary mastermind behind the Green Palmyra concept, had an ambitious goal at the time: after fleeing Syria, he wanted to build a new life for himself and his family. As a career changer, he quickly acquired an enormous amount of knowledge about gastronomy, food trends and equipment. After careful preparation, the concept is finalized: it is to be a modern food trailer that has as little impact on the environment as possible. The food should be as regional and organic as possible, packaging waste should be avoided and energy resources should be conserved. In addition, the design and technology must comply with the specifications of the Nuremberg market authority. In the end, Mr Hamwi found the right partners in the Zero Waste Nuremberg organization and the vehicle manufacturer ROKA Werk to get the full support of the Nuremberg Market Office. Together, the environmentally friendly food concept "Green Palmyra" with its fantastically fresh specialties is launched.

 

THE VEHICLE

Mr. Hamwi found the right vehicle for Green Palmyra's mobile street kitchen at ROKA, the market leader for gastromobile systems. The ROADRUNNER trailer model: robust, high-quality and beautifully designed. The vehicle lettering was developed by ROKA in close cooperation with the Nuremberg Market Office, so that it meets the strict requirements of the historic market location and received the necessary approval.

 

CO2-NEUTRAL COOLING AND LIGHTING

A solar system with battery storage was installed on the roof of the trailer in order to implement the topic of environmental protection and sustainability in the vehicle technology as well. It largely takes over the electrical supply for cooling and lighting in the vehicle. For greater efficiency, built-in appliances with the highest energy efficiency class and energy-saving LED lighting were installed. This is not only environmentally friendly, but also creates independence from external power sources.

 

ZERO WASTE

The Green Palmyra team receives support and advice on all aspects of waste avoidance from Zero Waste Nuremberg. The aim of the professional waste avoiders is to bring ideas together, learn from each other, think ahead and demonstrate - in the midst of a modern society and without pointing a finger. So at Green Palmyra, you don't have to take any kebabs wrapped in aluminum foil in white plastic bags, but can use your own boxes or bags instead. Of course, there is also to-go packaging, but this is made from recycled materials and its use is carefully considered. When eating on site, disposable tableware is avoided - you eat with real cutlery from real plates. It also tastes better.
