NUREMBERG MARKETS ARE RICHER WITH A SUSTAINABLE FOOD CONCEPT

A good year ago, the idea of a sustainable food concept for the Nuremberg markets was born. Majd Hamwi, founder and culinary mastermind behind the Green Palmyra concept, had an ambitious goal at the time: after fleeing Syria, he wanted to build a new existence for himself and his family. As a career changer, he quickly acquired enormous knowledge about gastronomy, food trends and equipment. After careful preparation, the concept is set: it is to be a modern food trailer that has as little impact on the environment as possible. The food should be as regional and organic as possible, packaging waste should be avoided and energy resources should be conserved. In addition, the design and technology must conform to the specifications of the Nuremberg Market Office. Finally, Mr Hamwi finds the right partners in the organisation Zero Waste Nuremberg and the vehicle manufacturer ROKA Werk to get the full support of the Nuremberg Market Office. Together, the environmentally friendly food concept "Green Palmyra" with its fantastically fresh specialities is launched.

 

THE VEHICLE

Mr Hamwi found the right vehicle for Green Palmyra's mobile street kitchen at ROKA, the market leader for gastromobile systems. The trailer model ROADRUNNER: robust, high-quality and shapely. The vehicle lettering was developed by ROKA in close coordination with the Nuremberg market office, so it meets the strict specifications of the historic market location and received the required approval.

 

CO2-NEUTRAL COOLING AND LIGHTING

In order to implement the topic of environmental protection and sustainability in the vehicle technology as well, a solar system with battery storage was installed on the roof of the trailer. It largely takes over the electrical supply for cooling and lighting in the vehicle. For more efficiency, built-in appliances with the highest energy efficiency class and energy-saving LED lighting were installed. This is not only environmentally friendly, but also creates independence from external power sources.

 

ZERO WASTE

The Green Palmyra team receives support and advice on the topic of waste avoidance from Zero Waste Nuremberg. The goal of the professional waste avoiders is to bring together ideas, learn from each other, think ahead and demonstrate - in the midst of a modern society and without pointing fingers. At Green Palmyra, you don't take aluminium foil-wrapped kebabs in white plastic bags, but instead get the opportunity to use your own boxes or bags. Of course, there is also to-go packaging, but it is made of recycled materials and its use is carefully considered. When eating on site, disposable tableware is dispensed with - you dine with real cutlery from real plates. It also tastes better.
